We love creating food experiences at home that reflect our love of travel and adventure. We have always wanted to travel to Mexico so decided to hold a Mexican dinner at home while we dream and plan of adventures!
With the help of Marathon Foods Chef’s Direct range we were able to create a Mexican feast with friends to bring in the weekend.
The thing I loved most about this meal was how easy it was to prepare on a Friday night after a big school and work week.
The kids helped cut up the tomatoes, onions, tomatoes, lime and avocado while we just popped the chilli con carne in the microwave for 3 minutes. The Chilli con carne ( mild) made with real beef comes in a 300g sachet and just just stays in your cupboard or it could be taken on camping and fishing trips for real food, fast!
We all really enjoyed it and it had just the right amount of spice.
We made two dishes for 9 guests ( 4 adults 5 kids) and that’s the great thing about these meals that you can choose what you like and create your own special wrap or taco. Perfect for kids who want to be independent and make their own good food choices.
We also made Nachos loved by everyone at the table. We make it in a big dish with layers so you get a bit of everything in each serve.
Nachos ( for 6 people)
1 Pkt corn chips 300g
2 sachets of chilli con carne from Marathon Foods. ( 600g)
6 Tablespoons of salsa
200g grated cheese of choice
We layer it chips, cheese, con carne, salsa and repeat twice.
Pop it in the oven at 180oC for 10 mins.
Add sour cream and guacamole to taste.
